Simple Beef Stroganoff with Egg Noodles

1 pound beef sirloin, thinly sliced

2 tablespoons olive oil

1 medium onion, finely chopped

2 cloves garlic, minced

8 ounces mushrooms, sliced

1 teaspoon Dijon mustard

1 cup beef broth

1 tablespoon Worcestershire sauce

1 cup sour cream

Salt and pepper to taste

12 ounces egg noodles

Fresh parsley, chopped (for garnish)

Cook the Egg Noodles: In a large pot of salted boiling water, cook the egg noodles according to package instructions until al dente. Drain and set aside.

    Sauté the Beef: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the sliced beef sirloin in batches, cooking for about 2-3 minutes until browned. Remove the beef from the skillet and set aside.

      Sauté the Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Sauté the chopped onion for about 3-4 minutes until translucent, then add the minced garlic and sliced mushrooms. Cook for an additional 5-7 minutes until the mushrooms are tender and liquid has evaporated.

        Combine Ingredients: After the mushrooms have cooked down, stir in the Dijon mustard, beef broth, and Worcestershire sauce. Let the mixture simmer for about 5 minutes.

          Mix in the Beef and Sour Cream: Lower the heat and return the beef to the skillet. Stir in the sour cream and mix until well combined. Cook for another 2-3 minutes until heated through and the sauce is creamy. Season with salt and pepper to taste.

            Combine with Noodles: Toss the egg noodles into the skillet with the beef stroganoff mixture until well coated.
