Shrimp Scampi Pasta Bake

12 oz (340g) linguine or spaghetti

1 lb (450g) large shrimp, peeled and deveined

4 cloves garlic, minced

1/2 cup (120ml) dry white wine

1/4 cup (60ml) fresh lemon juice

1/2 cup (115g) unsalted butter

1/2 cup (120ml) heavy cream

1 cup (100g) shredded mozzarella cheese

1/2 cup (50g) grated Parmesan cheese

1/4 cup (15g) chopped fresh parsley

1 tsp red pepper flake (adjust to taste)

Salt and pepper, to taste

Zest of 1 lemon

1/2 cup (60g) breadcrumbs (optional, for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook Pasta: In a large pot, bring salted water to a boil. Add the linguine or spaghetti and cook until al dente according to package instructions. Drain and set aside.

      Sauté Shrimp: In a large skillet over medium heat, melt butter. Add minced garlic and sauté for about 1 minute until fragrant. Add shrimp, red pepper flakes, salt, and pepper. Cook for 3-4 minutes, until shrimp turn pink and are cooked through. Remove from heat.

        Make the Sauce: Pour in the white wine and lemon juice into the skillet, stirring to combine. Allow to simmer for 2-3 minutes. Add heavy cream and stir until well mixed. Sprinkle in lemon zest and adjust seasoning if needed.

          Combine with Pasta: In a large bowl, combine the cooked pasta and shrimp mixture. Mix well to ensure the pasta is coated with the sauce. Stir in parsley and half of the mozzarella and Parmesan cheeses.

            Transfer to Baking Dish: Pour the pasta and shrimp mixture into a greased 9x13 inch (23x33 cm) baking dish. Spread it out evenly.

              Top with Cheese & Breadcrumbs: Sprinkle the remaining mozzarella and Parmesan over the pasta. If desired, add breadcrumbs on top for extra crunch.

                Bake: Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the cheese is bubbly and golden brown.
