Shrimp Scampi Linguine

12 oz linguine pasta

1 lb large shrimp, peeled and deveined

4 cloves garlic, minced

1/2 teaspoon red pepper flakes (adjust to taste)

1/2 cup dry white wine (such as Sauvignon Blanc)

1/2 cup unsalted butter (1 stick)

2 tablespoons olive oil

Juice of 1 lemon (about 2 tablespoons)

Zest of 1 lemon

1/4 cup fresh parsley, chopped

Salt and black pepper, to taste

Grated Parmesan cheese, for serving (optional)

Instructions
 

Cook the Linguine:

    Bring a large pot of salted water to a boil. Add linguine and cook according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain and set aside.

      Sauté the Garlic and Shrimp:

        In a large skillet over medium heat, melt the butter and olive oil together. Add minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant but not browned. Add the shrimp, season with salt and black pepper, and cook for 2-3 minutes on each side, or until they turn pink and opaque. Remove the cooked shrimp from the skillet and set aside.

          Deglaze the Pan:

            In the same skillet, pour in the white wine and increase the heat to medium-high. Let it simmer for about 2-3 minutes, scraping up any bits stuck to the bottom of the skillet. This will enhance the flavor.

              Combine Ingredients:

                Reduce the heat to low, then return the shrimp to the skillet along with the lemon juice and zest. Toss everything to combine. If needed, add reserved pasta water a little at a time to adjust the sauce's consistency.

                  Mix with Linguine:

                    Add the drained linguine to the skillet, tossing gently to coat the pasta with the sauce. Mix in the chopped parsley and adjust seasoning with more salt and pepper if needed.

                      Serve:

                        Plate the shrimp scampi linguine hot, garnishing with additional parsley and grated Parmesan cheese if desired. Enjoy this delicious meal with a side of crusty bread!
