1 cup fresh or frozen blueberries

¼ cup honey or maple syrup

2 tablespoons balsamic vinegar

1 teaspoon cornstarch mixed with 1 tablespoon water (optional for thickening)

1 head of butter lettuce or romaine, leaves separated

1 red bell pepper, thinly sliced

1 cucumber, julienned

Fresh cilantro, for garnish

Make the Blueberry Glaze: In a small saucepan, combine the blueberries, honey (or maple syrup), and balsamic vinegar over medium heat. Bring to a simmer, stirring occasionally, until the blueberries start to break down and create a sauce (about 5–7 minutes). If you prefer a thicker glaze, stir in the cornstarch-water mixture and cook for an additional 1–2 minutes until thickened. Season with salt and pepper to taste. Remove from heat and set aside.

    Prepare the Shrimp: In a large bowl, toss the shrimp with olive oil, garlic, ginger, soy sauce, lime juice, salt, and pepper. Let them marinate for about 10 minutes while you prepare the remaining ingredients.

      Cook the Shrimp: Heat a skillet over medium-high heat. Add the marinated shrimp in a single layer and cook for about 2-3 minutes on each side until they are pink and opaque. Remove from heat.
