1 lb large shrimp, peeled and deveined

2 cups long-grain white rice

4 cups chicken broth

1 medium onion, finely chopped

1 green bell pepper, diced

2 stalks celery, diced

3 cloves garlic, minced

1 cup diced tomatoes (with juices)

2 teaspoons Cajun seasoning

1 teaspoon smoked paprika

1 teaspoon dried thyme

1/2 teaspoon cayenne pepper (adjust to taste)

1 bay leaf

3 tablespoons vegetable oil

Salt and black pepper, to taste

1/4 cup green onions, sliced (for garnish)

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Rice: Rinse the long-grain rice in cold water until the water runs clear. Drain well and set aside.

    Cook the Vegetables: In a large heavy-bottomed pot or Dutch oven, heat the vegetable oil over medium heat. Add the chopped onions, green bell pepper, and celery. Sauté for about 5-7 minutes until the vegetables are soft and the onions are translucent.
