Shrimp Cucumber Cups

Ingredients
  

1 pound large shrimp, peeled and deveined

2 medium cucumbers, cut into 1-inch thick rounds

1 tablespoon olive oil

1 tablespoon lemon juice

1 teaspoon garlic powder

Salt and pepper, to taste

1 avocado, diced

1/4 cup fresh cilantro, chopped

1/4 cup red onion, finely diced

1 jalapeño, seeded and minced (optional for heat)

1/4 cup Greek yogurt or sour cream

Zest of 1 lime

Lime wedges, for garnish

Instructions
 

Prepare the Shrimp: In a medium saucepan, bring salted water to a boil. Add the shrimp and cook for 2-3 minutes, or until they turn pink and opaque. Drain and immediately transfer to an ice bath to stop cooking. Once cooled, chop the shrimp into bite-sized pieces.

    Make the Dressing: In a mixing bowl, combine olive oil, lemon juice, garlic powder, salt, and pepper. Mix well and set aside.

      Combine Ingredients: In a large mixing bowl, combine chopped shrimp, diced avocado, cilantro, red onion, and minced jalapeño. Pour the dressing over the mixture and gently toss until well combined.

        Prepare the Cucumber Cups: Using a melon baller or a small spoon, scoop out a little of the flesh from the center of each cucumber round to create a small cup.

          Fill the Cucumber Cups: Spoon the shrimp-avocado mixture generously into each cucumber cup.

            Top with Greek Yogurt: In a small bowl, mix Greek yogurt with lime zest. Dollop a teaspoon of the yogurt mixture atop each cucumber cup for added creaminess.

              Garnish and Serve: Arrange the shrimp cucumber cups on a serving platter. Garnish with lime wedges and serve immediately for the freshest taste.
