1 lb large shrimp, peeled and deveined

2 medium cucumbers

1 cup diced red bell pepper

½ cup diced red onion

½ cup fresh cilantro, chopped

1 avocado, diced

2 tablespoons olive oil

1 tablespoon lime juice

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper, to taste

Lime wedges, for garnish

Instructions
 

Prepare the Shrimp: In a medium saucepan, bring water to a boil. Add the shrimp and cook for 2-3 minutes until they turn pink and opaque. Drain and cool them under cold water. Once cooled, chop them into bite-sized pieces.

    Make the Filling: In a large bowl, combine the chopped shrimp, diced red bell pepper, diced red onion, diced avocado, and chopped cilantro.

      Prepare the Dressing: In a small bowl, whisk together the olive oil, lime juice, garlic powder, paprika, salt, and pepper. Pour the dressing over the shrimp mixture and toss gently to combine, ensuring all ingredients are well coated.

        Prepare the Cucumbers: Slice the cucumbers into 1½ - inch thick rounds. Use a small spoon or melon baller to gently scoop out a portion of the inside of each cucumber slice, creating a small cup.

          Assemble the Cups: Spoon a generous amount of the shrimp filling into each cucumber cup, pressing lightly to secure the filling.

            Garnish and Serve: Arrange the filled cucumber cups on a platter and garnish with lime wedges and additional cilantro if desired. Enjoy as a refreshing appetizer!
