Shrimp Avocado Salad

Ingredients
  

1 lb fresh shrimp, peeled and deveined

2 ripe avocados, diced

1 cup cherry tomatoes, halved

1/2 cup red onion, finely chopped

1/4 cup fresh cilantro, chopped

1 lime, juiced

2 tablespoons olive oil

1 tablespoon honey

Salt and pepper, to taste

1/4 teaspoon red pepper flakes (optional)

4 cups mixed greens (e.g., arugula, spinach, and romaine)

Instructions
 

Prepare the Shrimp: In a medium pot, bring 4 cups of water to a boil. Add the shrimp and cook for 2-3 minutes or until they turn pink and opaque. Remove the shrimp from the pot and plunge them into ice water to stop the cooking process. Drain and set aside.

    Make the Dressing: In a small bowl, whisk together lime juice, olive oil, honey, salt, and pepper (add red pepper flakes for a kick, if desired). Adjust the seasoning to taste.

      Combine the Ingredients: In a large bowl, gently toss the cooked shrimp, diced avocados, cherry tomatoes, red onion, and cilantro. Drizzle the dressing over the mixture and gently combine until everything is well coated.

        Serve Over Greens: Lay the mixed greens on a serving platter or individual bowls. Top with the shrimp and avocado mixture, dividing it evenly.

          Garnish and Enjoy: Serve immediately, garnishing with extra cilantro or lime wedges if desired.
