Shrimp Alfredo Zucchini Noodles

2 medium zucchinis, spiralized

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

3 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1/2 teaspoon Italian seasoning

Salt and pepper to taste

Fresh parsley, chopped, for garnish

Optional: red pepper flakes for a spicy kick

Prepare the Zucchini Noodles: Spiralize the zucchinis into noodles and set them aside. It’s best to do this just before cooking to keep them fresh and crisp.

    Cook the Shrimp: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the shrimp to the skillet, season with salt and pepper, and cook for about 2-3 minutes on each side, or until they are pink and opaque. Remove the shrimp from the skillet and set aside.

      Make the Alfredo Sauce: In the same skillet, pour in the remaining tablespoon of olive oil and add the minced garlic. Sauté for about 1 minute until fragrant, being careful not to burn it.

        Add Cream and Cheese: Pour in the heavy cream and bring it to a gentle simmer. Gradually whisk in the Parmesan cheese until melted and smooth. Stir in the Italian seasoning and season with salt and pepper to taste.

          Combine Zucchini Noodles and Sauce: Add the spiralized zucchini noodles to the skillet with the Alfredo sauce. Toss to coat the noodles evenly in the sauce. Cook for 2-3 minutes, just until the noodles are tender but still firm.

            Add Shrimp: Return the cooked shrimp to the skillet and mix well with the zucchini noodles and sauce. Heat everything together for an additional 1-2 minutes to warm the shrimp through.
