Savory Turkey and Spinach Stuffed Peppers

Ingredients
  

4 large bell peppers (any color)

1 pound ground turkey

2 cups fresh spinach, chopped

1 cup cooked quinoa or rice

1 cup diced tomatoes (canned or fresh)

1 small onion, finely chopped

3 cloves garlic, minced

1 teaspoon Italian seasoning

1 teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup shredded mozzarella cheese

2 tablespoons olive oil

Fresh parsley, for garnish (optional)

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Prepare Peppers: Cut the tops off the bell peppers and remove the seeds and membranes. Lightly brush the outside of each pepper with olive oil for added flavor and to help them roast evenly. Place the peppers upright in a baking dish.

      Cook the Filling: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for another minute until fragrant.

        Brown the Turkey: Add the ground turkey to the skillet, breaking it apart with a spoon. Cook until the turkey is no longer pink, around 5-7 minutes. Drain any excess fat.

          Add Spinach and Seasoning: Stir in the chopped spinach and cook until wilted, about 1-2 minutes. Add the diced tomatoes, cooked quinoa or rice, Italian seasoning, paprika, salt, and black pepper. Mix everything thoroughly and let it simmer for another 2-3 minutes to combine the flavors.

            Stuff the Peppers: Remove the skillet from the heat and fold in half of the shredded mozzarella cheese. Carefully spoon the turkey and spinach mixture into each of the prepared bell peppers, packing them tightly.

              Top with Cheese: Once all the peppers are filled, sprinkle the remaining mozzarella cheese on top of each stuffed pepper.

                Bake: Cover the baking dish with aluminum foil and place it in the preheated oven. Bake for 25 minutes. Remove the foil and continue baking for an additional 10-15 minutes, or until the peppers are tender and the cheese is bubbly and lightly golden.

                  Garnish and Serve: Once out of the oven, let the stuffed peppers cool for a few minutes. Garnish with fresh parsley if desired before serving.
