Savory Turkey and Spinach Stuffed Peppers

4 large bell peppers (any color)

1 lb ground turkey

2 cups fresh spinach, chopped

1 cup cooked quinoa or brown rice

1 small onion, finely chopped

2 cloves garlic, minced

1 tsp dried oregano

1 tsp smoked paprika

1/2 tsp salt

1/2 tsp black pepper

1 can (14.5 oz) diced tomatoes, drained

1 cup shredded mozzarella cheese

2 tbsp olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Peppers: Slice the tops off the bell peppers and remove the seeds and membranes. Lightly brush the outsides with a bit of olive oil and place them upright in a baking dish.

      Cook the Turkey Mixture:

        - In a large skillet, heat 2 tablespoons of olive oil over medium heat.

          - Add the chopped onion and sauté for about 3-4 minutes until it becomes translucent.

            - Add the minced garlic, ground turkey, oregano, smoked paprika, salt, and pepper. Cook until the turkey is browned and fully cooked, about 5-7 minutes.

              Incorporate Spinach and Quinoa:

                - Stir in the chopped spinach and cook until wilted, approximately 2-3 minutes.

                  - Add the drained diced tomatoes and cooked quinoa or brown rice. Mix well to combine and remove from heat.

                    Stuff the Peppers: Carefully spoon the turkey and spinach mixture into each bell pepper, packing it tightly. Leave a little room at the top as it will expand during cooking.

                      Top with Cheese: Sprinkle shredded mozzarella cheese on top of each stuffed pepper.

                        Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.

                          Garnish and Serve: Once baked, remove from the oven and let the peppers cool for a few minutes. Garnish with fresh chopped parsley before serving.
