1 lb ground turkey

1 cup quinoa, rinsed

2 cups chicken broth

1 medium onion, diced

2 cloves garlic, minced

1 red bell pepper, diced

1 cup frozen mixed vegetables (peas, carrots, corn)

1 can (14 oz) diced tomatoes, drained

1 teaspoon dried Italian herbs (oregano, basil, thyme)

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup shredded cheddar cheese

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook Quinoa: In a medium saucepan, combine the rinsed quinoa and chicken broth. Bring to a boil, then cover, reduce the heat, and simmer until the quinoa is fluffy and liquid is absorbed, about 15 minutes. Set aside.

      Sauté Vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced onion, bell pepper, and garlic. Sauté until the onion becomes translucent, about 5 minutes.

        Cook Turkey: Add the ground turkey to the skillet. Break it apart with a spatula and cook until browned and no longer pink, about 7-8 minutes. Season with salt, pepper, Italian herbs, and smoked paprika.

          Combine Ingredients: Stir in the cooked quinoa, mixed vegetables, and drained diced tomatoes into the turkey mixture. Mix thoroughly to combine all ingredients evenly.

            Transfer to Baking Dish: Pour the turkey and quinoa mixture into a greased 9x13 inch casserole dish. Spread it evenly.

              Add Cheese: Sprinkle the shredded cheddar cheese evenly over the top of the casserole.

                Bake: Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.
