12 oz (340g) spaghetti or penne pasta

1 lb (450g) Italian sausage (mild or spicy, your choice)

2 tablespoons olive oil

1 medium onion, finely chopped

4 cloves garlic, minced

1 bell pepper (red or green), diced

1 can (14 oz) diced tomatoes with juices

1 cup chicken or vegetable broth

1 teaspoon dried oregano

1 teaspoon dried basil

½ teaspoon red pepper flakes (optional for heat)

Salt and pepper to taste

1 cup spinach leaves, packed

½ cup grated Parmesan cheese

Fresh basil leaves, for garnish

Cook the Pasta: In a large pot, bring salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.

    Brown the Sausage: In a large skillet over medium heat, add the Italian sausage. Cook it, breaking it apart with a wooden spoon until browned and fully cooked (about 5-7 minutes). Remove the sausage from the skillet and set aside.

      Sauté the Vegetables: In the same skillet, add olive oil. Once hot, add the chopped onion and bell pepper. Sauté for about 3-4 minutes until they soften. Add the minced garlic and cook for an additional minute until fragrant.

        Add Tomatoes and Broth: Pour in the diced tomatoes with their juices and the chicken or vegetable broth. Stir to combine, then add the dried oregano, dried basil, red pepper flakes (if using), and season with salt and pepper. Allow the mixture to simmer for about 5 minutes.

          Combine Ingredients: Return the browned sausage to the skillet, and mix in the cooked pasta. Stir until everything is well combined and heated through. If the mixture seems too dry, add a bit more broth or a splash of pasta water.

            Incorporate Spinach: Stir in the spinach leaves, allowing them to wilt into the pasta mixture (this will take about 2 minutes).
