Savory Pork Tenderloin with Apples and Onions

1.5 lbs pork tenderloin

2 medium apples (preferably Granny Smith or Honeycrisp), cored and sliced

2 medium yellow onions, sliced

3 tablespoons olive oil

1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)

1 tablespoon fresh thyme, chopped (or 1 teaspoon dried)

3 cloves garlic, minced

1/2 cup chicken broth

2 tablespoons apple cider vinegar

Salt and pepper to taste

1 tablespoon brown sugar (optional, for sweetness)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 400°F (200°C).

    Prepare the Pork Tenderloin: Pat the pork tenderloin dry with paper towels. Season generously with salt and pepper on all sides.

      Sear the Pork: In an oven-safe skillet, heat 2 tablespoons of olive oil over medium-high heat. Once hot, add the pork tenderloin and sear for about 3-4 minutes on each side until browned. Once seared, remove the pork from the skillet and set aside.

        Sauté the Onions and Garlic: In the same skillet, add the remaining tablespoon of olive oil. Add the sliced onions and cook for 3-4 minutes until they start to soften. Add the minced garlic and cook for another minute until fragrant.

          Add Apples and Herbs: Stir in the sliced apples, rosemary, thyme, and the optional brown sugar. Cook for another 3-4 minutes until the apples begin to soften slightly.

            Deglaze the Skillet: Pour in the chicken broth and apple cider vinegar, scraping up any browned bits from the skillet. Bring the mixture to a simmer.

              Return the Pork: Place the seared pork tenderloin back in the skillet, nestling it among the apples and onions. Spoon some of the mixture over the pork.

                Roast in the Oven: Transfer the skillet to the preheated oven and roast for about 20-25 minutes, or until the pork reaches an internal temperature of 145°F (63°C).

                  Rest and Slice: Once cooked, remove the skillet from the oven and let the pork rest for 5 minutes before slicing.

                    Serve: Arrange the sliced pork tenderloin on a platter, surrounded by the apples and onions. Drizzle with pan juices and garnish with chopped fresh parsley.
