1 pound ground beef or a mix of ground beef and ground pork

1/2 cup breadcrumbs

1/4 cup grated Parmesan cheese

1/4 cup fresh parsley, chopped

1 large egg

2 cloves garlic, minced

6 cups chicken broth

2 cups fresh baby spinach

1 cup carrots, diced

1 cup onions, diced

1 cup small pasta (such as acini di pepe or orzo)

1 tablespoon olive oil

Salt and pepper to taste

1/2 teaspoon dried Italian herbs (optional)

Additional grated Parmesan for serving

Instructions
 

Prepare the Meatballs:

    - In a mixing bowl, combine the ground beef (or beef/pork mix), breadcrumbs, grated Parmesan, parsley, egg, minced garlic, salt, and pepper. Mix until well combined.

      - Shape the mixture into small meatballs, about 1 inch in diameter. Set them aside.

        Sauté Vegetables:

          - In a large pot, heat the olive oil over medium heat. Add the diced onions and carrots, cooking for about 5-7 minutes, or until the vegetables are softened and onions are translucent.

            Add Broth:

              - Pour in the chicken broth, bring the mixture to a simmer.

                Cook the Meatballs:

                  - Carefully drop the prepared meatballs into the simmering broth. Allow them to cook for about 10-15 minutes, until they are cooked through.

                    Add Pasta:
