Ingredients

9 lasagna noodles

2 cups cooked chicken, shredded

1 cup ricotta cheese

1 cup spinach, chopped (fresh or frozen, thawed and drained)

1 cup mozzarella cheese, shredded

1/2 cup grated Parmesan cheese

1 egg

2 tablespoons fresh basil, chopped (or 1 tablespoon dried basil)

2 tablespoons fresh parsley, chopped (or 1 tablespoon dried parsley)

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

2 cups marinara sauce

Olive oil for drizzling

Extra herbs for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Cook the Lasagna Noodles: In a large pot of boiling salted water, cook the lasagna noodles according to package instructions until al dente. Drain and lay them flat on a clean kitchen towel to cool.

Prepare the Filling: In a large mixing bowl, combine the shredded chicken, ricotta cheese, chopped spinach, 1/2 cup of mozzarella cheese, melted Parmesan cheese, egg, basil, parsley, garlic powder, onion powder, salt, and black pepper. Mix well until all ingredients are combined.

Roll the Lasagna: Spread a thin layer (about 1/3 cup) of marinara sauce at the bottom of a 9x13 inch baking dish. Take one lasagna noodle and spread a generous amount of the chicken filling down the length of the noodle. Carefully roll the noodle from one end to the other, securing the filling inside. Place the roll seam-side down in the baking dish. Repeat with all noodles.

Top with Sauce and Cheese: Once all the roll-ups are in the dish, pour the remaining marinara sauce over the top. Sprinkled the remaining mozzarella cheese over the sauce, and drizzle a little olive oil on top for added flavor.

Bake: Cover the baking dish with aluminum foil and bake for 25 minutes. Then, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and lightly golden.

Garnish and Serve: Once baked, let the dish cool for about 5-10 minutes. Optionally, garnish with extra chopped herbs before serving.
