1 lb boneless, skinless chicken thighs, diced

1 cup long-grain white rice

2 cups chicken broth

1 cup frozen green peas

1 medium onion, finely chopped

3 cloves garlic, minced

1 tablespoon soy sauce

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

Fresh parsley or cilantro, for garnish (optional)

Lemon wedges, for serving

Prepare the Rice: In a medium saucepan, combine the long-grain rice and chicken broth. Bring to a boil over medium-high heat. Once boiling, reduce heat to low, cover, and simmer for 15-18 minutes until the rice is cooked and the liquid is absorbed. Remove from heat and let it sit covered for another 5 minutes.
