Savory Black Bean and Cheese Quesadillas

1 can (15 oz) black beans, drained and rinsed

1 cup shredded Monterey Jack cheese

1 cup shredded sharp cheddar cheese

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon garlic powder

½ teaspoon onion powder

¼ teaspoon salt (adjust to taste)

¼ teaspoon black pepper

½ cup corn kernels (fresh or frozen)

1 small red bell pepper, diced

½ small red onion, finely chopped

1-2 tablespoons olive oil (for frying)

4 large flour tortillas

Fresh cilantro, chopped (for garnish)

Sour cream or salsa (for serving)

Instructions
 

In a mixing bowl, combine the black beans, Monterey Jack cheese, sharp cheddar cheese, ground cumin, smoked paprika, garlic powder, onion powder, salt, black pepper, corn, diced red bell pepper, and chopped red onion. Mix until well combined.

    Heat a large nonstick skillet over medium heat and add 1 tablespoon of olive oil. Once the oil is hot, place one tortilla in the skillet.

      Evenly spread about 1/4 of the black bean and cheese mixture on half of the tortilla. Fold the tortilla in half over the filling.

        Cook the quesadilla for about 3-4 minutes until the bottom is golden brown and the cheese starts to melt. Carefully flip the quesadilla and cook for another 3-4 minutes on the other side.

          Remove the quesadilla from the skillet and place it on a cutting board. Allow it to cool slightly before cutting into wedges.

            Repeat steps 2-5 with the remaining tortillas and filling mixture, adding more olive oil as needed for frying.

              Serve warm, garnished with fresh cilantro, alongside sour cream or salsa for dipping.
