1 pound fresh green beans, trimmed

2 tablespoons olive oil

1 teaspoon garlic, minced

½ teaspoon red pepper flakes (optional for heat)

½ teaspoon sea salt

¼ teaspoon black pepper

½ cup sliced almonds

1 tablespoon lemon juice

Zest of 1 lemon

Fresh parsley, chopped (for garnish)

Prepare the Green Beans: Wash and trim the green beans, removing the ends. Place them in a pot of boiling salted water and blanch for about 3 minutes until they’re bright green and just tender. Drain and immediately plunge them into a bowl of ice water to stop the cooking process. Once cooled, drain again and set aside.

    Toast the Almonds: In a dry skillet over medium heat, add the sliced almonds. Toast them for about 2-4 minutes, stirring frequently, until they are golden brown and fragrant. Be careful not to burn them. Remove the toasted almonds from the skillet and set aside.

      Sauté the Green Beans: In the same skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, sautéing for about 30 seconds until the garlic is fragrant but not browned.

        Combine Ingredients: Add the blanched green beans to the skillet, seasoning them with sea salt and black pepper. Sauté the green beans for about 5-7 minutes, stirring occasionally, until they are tender yet still crisp.

          Finish the Dish: Remove the skillet from the heat. Stir in the lemon juice and lemon zest, mixing well to coat the green beans. Gently fold in the toasted almonds, ensuring they are evenly distributed.
