1 pound Italian sausage (sweet or spicy, your choice)

1 medium onion, diced

2 cloves garlic, minced

3 large carrots, sliced

2 ribs celery, diced

1 can (14.5 oz) diced tomatoes (with juices)

6 cups chicken or vegetable broth

1 teaspoon dried Italian seasoning

1/2 teaspoon red pepper flakes (optional)

1 package (9 oz) fresh cheese tortellini

2 cups fresh spinach or kale, roughly chopped

Salt and pepper, to taste

Fresh basil, for garnish

Grated Parmesan cheese, for serving

Cook the Sausage: In a large pot or Dutch oven, over medium heat, crumble the Italian sausage. Cook until browned and fully cooked, about 5-7 minutes. Use a slotted spoon to remove the sausage and set aside, leaving the rendered fat in the pot.

    Sauté the Vegetables: In the same pot, add diced onion, carrots, and celery. Sauté for about 5-7 minutes or until the vegetables begin to soften. Add minced garlic and sauté for another 1-2 minutes until fragrant.

      Add Liquids: Stir in the diced tomatoes (with their juices), chicken or vegetable broth, Italian seasoning, and red pepper flakes if using. Bring the mixture to a boil.

        Simmer: Once boiling, reduce the heat to low and let it simmer for about 10 minutes, allowing the flavors to meld together.

          Tortellini Time: Add the tortellini to the soup and return to a gentle boil. Cook according to package instructions, usually about 3-5 minutes until tender.

            Add Greens: Stir in the chopped spinach or kale and allow it to wilt for about 2-3 minutes. Return the cooked sausage to the pot and mix well.
