Sausage and Potato Breakfast Skillet

Ingredients
  

1 pound breakfast sausage (links or ground)

4 medium-sized potatoes, diced (Yukon Gold or red potatoes work well)

1 medium onion, diced

1 bell pepper, diced (any color you prefer)

3 cloves garlic, minced

1 teaspoon paprika

1/2 teaspoon black pepper

1 teaspoon salt (to taste)

1/2 teaspoon crushed red pepper flakes (optional for spice)

4 large eggs

2 tablespoons olive oil (or cooking oil of your choice)

Fresh parsley or chives, chopped (for garnish)

Instructions
 

Prepare the Potatoes: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced potatoes and season with salt and pepper. Cook for about 10-15 minutes, stirring occasionally, until the potatoes are golden brown and tender. If needed, you can cover the skillet to help them cook through faster.

    Cook the Sausage: While the potatoes cook, in a separate pan or after the potatoes are cooked, add the breakfast sausage over medium heat. If using links, remove the casings and crumble the sausage as it cooks. Brown the sausage until it’s fully cooked, about 6-8 minutes. Remove from heat and set aside.

      Sauté the Vegetables: Into the same skillet with the potatoes, add the diced onion and bell pepper. Stir and cook for about 5-7 minutes until the vegetables are softened. Add the minced garlic, paprika, and crushed red pepper flakes (if using) and cook for an additional 1-2 minutes until fragrant.

        Combine Ingredients: Once the vegetables are softened and fragrant, add the cooked sausage back to the skillet. Stir everything together until well combined. Check for seasoning and adjust salt and pepper if needed.

          Cook the Eggs: Make four small wells in the sausage and potato mixture. Crack an egg into each well. Cover the skillet and reduce the heat to low. Cook for about 4-5 minutes, or until the eggs are cooked to your liking (runny yolks or fully cooked).

            Serve: Remove the skillet from heat. Garnish with chopped parsley or chives. Serve hot directly from the skillet for a communal breakfast experience, or plate individually.
