Ingredients

1 cup unsalted butter, softened

1 cup brown sugar, packed

1/2 cup granulated sugar

2 large eggs

2 teaspoons vanilla extract

2 1/2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon sea salt (plus extra for sprinkling)

1 cup butterscotch chips

1/2 cup chopped pecans (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Cream the Butter and Sugars: In a large mixing bowl, use an electric mixer to cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 3-4 minutes.

Add Eggs and Vanilla: Beat in the eggs one at a time, then add the vanilla extract. Mix until well combined.

Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, and sea salt.

Mix Dry and Wet Ingredients: Gradually add the dry ingredients to the wet mixture, mixing until just combined. Be careful not to overmix.

Fold in Butterscotch Chips: Stir in the butterscotch chips and chopped pecans if using, ensuring they are evenly distributed throughout the dough.

Scoop the Dough: Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, leaving about 2 inches of space between each cookie.

Sprinkle with Sea Salt: Lightly sprinkle a bit of sea salt on top of each cookie dough ball.

Bake the Cookies: Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown and the centers look slightly underbaked.

Cool: Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Serve and Enjoy: Serve warm, or store in an airtight container at room temperature for up to a week. Enjoy the delightful combination of sweet and salty flavors!
