1 pound large shrimp, peeled and deveined

1/2 cup cornstarch

1/2 cup all-purpose flour

2 teaspoons baking powder

1 teaspoon salt

1 teaspoon black pepper

1 teaspoon white pepper

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon cayenne pepper (optional, for heat)

1 cup buttermilk

Vegetable oil (for frying)

Fresh cilantro or green onions (for garnish)

Lime wedges (for serving)

Prepare the Marinade: In a medium bowl, combine the buttermilk with a pinch of salt and pepper. Add the shrimp, coating them well. Let the shrimp marinate for at least 30 minutes in the refrigerator.

    Mix the Dry Ingredients: In a large bowl, whisk together cornstarch, all-purpose flour, baking powder, salt, black pepper, white pepper, garlic powder, onion powder, and cayenne pepper until evenly combined.

      Heat the Oil: In a deep skillet or large pot, pour in enough vegetable oil to reach a depth of about 2 inches. Heat the oil over medium-high heat until it shimmers (about 350°F or 175°C).

        Coat the Shrimp: Remove the marinated shrimp from the refrigerator. Working in batches, take the shrimp from the buttermilk and dredge them in the flour mixture, ensuring they are fully coated. Shake off any excess.

          Fry the Shrimp: Carefully place the coated shrimp into the hot oil (do not overcrowd the pan). Fry for about 2-3 minutes per side, or until they are golden brown and crispy. Use a slotted spoon to transfer the cooked shrimp to a plate lined with paper towels to absorb excess oil.
