Rosemary Sea Salt Pretzel Bites

1 ½ cups warm water (110°F to 115°F)

1 packet (0.25 oz) active dry yeast

3 tablespoons granulated sugar

4 cups all-purpose flour

½ cup baking soda

2 teaspoons fine sea salt

2 tablespoons unsalted butter, melted

1 tablespoon fresh rosemary, finely chopped

Coarse sea salt, for sprinkling

Instructions
 

In a large mixing bowl, combine the warm water, yeast, and granulated sugar. Let it sit for about 5-10 minutes until it becomes frothy.

    Stir in the melted butter and finely chopped rosemary. Gradually add the flour and salt, mixing until a dough forms.

      Knead the dough on a lightly floured surface for about 5 minutes until it’s smooth and elastic. Place the dough in a lightly greased bowl, cover with a kitchen towel, and let it rise in a warm place for 1 hour, or until it has doubled in size.

        After the dough has risen, preheat your oven to 450°F (232°C). Line two baking sheets with parchment paper.

          In a large pot, bring 10 cups of water to a gentle boil. Add baking soda carefully (it may bubble up).

            Punch down the risen dough and turn it out onto a floured surface. Divide it into 8 equal pieces. Roll each piece into a rope about 1 inch thick, then cut each rope into 1-inch long pieces to form bite-sized pretzel pieces.

              Carefully place the pretzel bites in the boiling water, in batches, for about 30 seconds each. Use a slotted spoon to transfer them back to the parchment-lined baking sheets after boiling. Make sure they are well spaced apart.

                Sprinkle the boiled pretzel bites generously with coarse sea salt.

                  Bake in the preheated oven for 12-15 minutes or until they are golden brown.
