Roasted Garlic & Spinach Ricotta Lasagna Rolls

12 lasagna noodles

2 cups fresh spinach, chopped

2 cups ricotta cheese

1 cup grated Parmesan cheese

1 cup shredded mozzarella cheese (plus extra for topping)

1 head of garlic

1 teaspoon olive oil

1 teaspoon dried oregano

1 teaspoon salt

½ teaspoon black pepper

1 jar (24 oz) marinara sauce

Fresh basil leaves for garnish (optional)

Instructions
 

Roast the Garlic: Preheat your oven to 400°F (200°C). Cut the top off of the head of garlic to expose the cloves, drizzle with olive oil, and wrap it in foil. Roast for about 30-35 minutes, until soft. Once cool, squeeze the roasted garlic into a bowl and mash it with a fork.

    Cook the Lasagna Noodles: Bring a large pot of salted water to a boil. Add the lasagna noodles and cook according to package instructions until al dente (~8-10 minutes). Drain and lay flat on a clean kitchen towel to prevent sticking.

      Prepare the Filling: In a mixing bowl, combine the ricotta cheese, 1 cup of Parmesan cheese, the roasted garlic, chopped spinach, dried oregano, salt, and black pepper. Mix well until all ingredients are evenly incorporated.

        Assemble the Rolls: Spread a thin layer of marinara sauce on the bottom of a 9x13 inch baking dish. Take one lasagna noodle, spread about 2-3 tablespoons of the ricotta filling evenly across its surface, then carefully roll it up starting from one end. Place the roll seam-side down in the baking dish. Repeat with the remaining noodles and filling.

          Add Sauce and Cheese: Once all rolls are in the dish, top them generously with the remaining marinara sauce and sprinkle with shredded mozzarella cheese.

            Bake the Lasagna Rolls: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden brown.

              Garnish and Serve: Let the lasagna rolls cool for about 5 minutes. Garnish with fresh basil leaves if desired and serve warm.
