Roasted Garlic & Mushroom Flatbread

For the flatbread:

2 cups all-purpose flour

1 teaspoon salt

1 teaspoon baking powder

3/4 cup warm water

2 tablespoons olive oil

For the roasted garlic & mushroom topping:

1 bulb garlic

12 oz mixed mushrooms (cremini, shiitake, or button), sliced

2 tablespoons olive oil

1 teaspoon fresh thyme (or 1/2 teaspoon dried thyme)

1 teaspoon balsamic vinegar

Salt and pepper, to taste

1 cup shredded mozzarella cheese

1/4 cup freshly grated Parmesan cheese

Fresh parsley, for garnish

Instructions
 

Roast the Garlic:

    - Preheat your oven to 400°F (200°C).

      - Slice the top off the bulb of garlic to expose the cloves. Drizzle with olive oil and wrap in aluminum foil.

        - Roast in the preheated oven for about 30-35 minutes, until the cloves are soft. Allow to cool.

          Prepare the Flatbread Dough:

            - In a mixing bowl, combine the flour, salt, and baking powder.

              - Gradually add the warm water and olive oil, mixing until a soft dough forms.

                - Knead on a lightly floured surface for about 5 minutes until smooth. Cover with a damp cloth and let it rest for 20 minutes.

                  Sauté the Mushrooms:

                    - While the dough is resting, heat 2 tablespoons of olive oil in a skillet over medium heat.

                      - Add the sliced mushrooms, fresh thyme, balsamic vinegar, salt, and pepper. Sauté for about 5-7 minutes until mushrooms are tender and browned. Remove from heat and set aside.

                        Shape the Flatbread:

                          - Preheat your oven to 475°F (245°C) or use a pizza stone if available.

                            - Divide the rested dough into two equal portions. Roll out each portion into a rectangle or circle on a lightly floured surface to your desired thickness.

                              Assemble the Flatbreads:

                                - Transfer the rolled-out flatbreads onto a baking sheet or pizza stone.

                                  - Squeeze the roasted garlic cloves out of their skins and spread them evenly over the surface of each flatbread.

                                    - Top with the sautéed mushrooms, shredded mozzarella, and grated Parmesan cheese.

                                      Bake:

                                        - Place the flatbreads in the oven and bake for 10-12 minutes, or until the edges are golden brown and the cheese is bubbly.

                                          - Once done, remove from the oven and let them cool for a couple of minutes.

                                            Garnish & Serve:

                                              - Sprinkle fresh parsley over the flatbreads for a pop of color and freshness.

                                                - Slice into pieces and serve warm as a delicious appetizer or main dish.
