Roasted Beet and Feta Salad

4 medium-sized beets, scrubbed clean

5 oz (150 g) feta cheese, crumbled

1 cup walnuts, roughly chopped

4 cups mixed greens (arugula, spinach, or kale)

1 small red onion, thinly sliced

½ cup fresh parsley, chopped

¼ cup olive oil

2 tbsp balsamic vinegar

1 tbsp honey

Salt and pepper, to taste

Instructions
 

Roast the Beets: Preheat the oven to 400°F (200°C). Wrap each beet in aluminum foil and place them on a baking sheet. Roast the beets for about 45-60 minutes, or until fork-tender. Remove from the oven, unwrap, and let them cool before peeling. Once cooled, cut them into bite-sized cubes.

    Prepare the Walnuts: While the beets are roasting, toast the walnuts. In a dry skillet over medium heat, add the chopped walnuts. Cook for about 5-7 minutes, stirring frequently, until they are fragrant and slightly golden. Remove from heat and let them cool.

      Make the Dressing: In a small bowl, whisk together the olive oil, balsamic vinegar, honey, salt, and pepper until well combined.

        Assemble the Salad: In a large salad bowl, combine the mixed greens, sliced red onion, roasted beet cubes, crumbled feta cheese, and toasted walnuts.

          Add the Dressing: Drizzle the dressing over the salad and gently toss everything together until well coated with the dressing.

            Garnish and Serve: Top with the freshly chopped parsley for a pop of color and additional flavor. Serve immediately or chill for about 15 minutes to allow the flavors to meld together.
