2 cups cooked rice (preferably day-old for better texture)

1/2 cup grated carrot

1/2 cup finely chopped bell peppers (any color)

1/4 cup green onions, finely sliced

1/4 cup fresh cilantro, chopped

1/2 tsp garlic powder

1/2 tsp onion powder

1 tsp soy sauce

1 large egg, beaten

1/2 cup all-purpose flour (or gluten-free flour)

Salt and pepper to taste

Vegetable oil for frying

Prepare the Mixture:

    In a large mixing bowl, combine the cooked rice, grated carrot, chopped bell peppers, green onions, cilantro, garlic powder, onion powder, soy sauce, and a pinch of salt and pepper. Mix until all ingredients are well combined.

      Bind the Patties:

        Add the beaten egg to the rice mixture and mix thoroughly to ensure the egg coats all ingredients. Gradually add the flour, stirring until the mixture holds together without being sticky. Adjust seasoning if necessary.

          Form the Patties:

            With clean hands, take a small portion of the mixture (about 2 tablespoons) and shape it into a patty. Make sure it's compact but not too dense. Repeat until all the mixture is used.

              Heat the Oil:

                In a large skillet, pour enough vegetable oil to cover the bottom (about 1/4 inch deep) and heat over medium-high heat until shimmering.

                  Fry the Patties:

                    Carefully place the patties in the hot oil, making sure not to overcrowd the pan. Fry for about 4-5 minutes on each side or until golden brown and crispy. Use a slotted spatula to turn the patties gently.

                      Drain Excess Oil:

                        Once cooked, transfer the patties to a plate lined with paper towels to drain excess oil while you cook the remaining patties.
