Ingredients

1.5 lbs chicken breast, cut into 1-inch cubes

1 cup buttermilk

1 packet (1 oz) ranch dressing mix

4 cloves garlic, minced

1/2 cup grated Parmesan cheese

1 tsp black pepper

1 tsp paprika

2 tbsp olive oil

1 tbsp fresh parsley, chopped (for garnish)

Skewers (metal or soaked wooden skewers)

Instructions

Marinate the Chicken: In a large bowl, combine the buttermilk, ranch dressing mix, minced garlic, black pepper, and paprika. Add the chicken cubes, ensuring they are well coated. Cover and refrigerate for at least 1 hour (or up to 8 hours for better flavor).

Preheat the Grill: Preheat your grill to medium-high heat (about 375°F).

Prepare Skewers: If using wooden skewers, soak them in water for about 30 minutes to prevent burning. Thread the marinated chicken onto the skewers, leaving a bit of space between each cube for even cooking.

Coat with Parmesan: In a shallow dish, mix the grated Parmesan cheese and olive oil. Roll each skewer gently in the mixture until coated evenly.

Grill the Skewers: Place the chicken skewers on the preheated grill. Cook for about 10-12 minutes, turning occasionally, until the chicken is golden brown and cooked through (internal temperature should reach 165°F).

Garnish and Serve: Remove from the grill, sprinkle with fresh parsley, and serve hot with a side of ranch dressing for dipping.
