1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) chickpeas, drained and rinsed

1 cup cherry tomatoes, halved

1 medium cucumber, diced

1 small red onion, finely chopped

1 bell pepper (any color), diced

1/4 cup fresh cilantro or parsley, chopped

3 tablespoons olive oil

2 tablespoons red wine vinegar

1 teaspoon garlic powder

1 teaspoon cumin

Salt and pepper to taste

Juice of 1 lime

Instructions
 

In a large mixing bowl, combine black beans, kidney beans, and chickpeas.

    Add the halved cherry tomatoes, diced cucumber, chopped red onion, and diced bell pepper to the bowl.

      Gently fold in the chopped cilantro or parsley to incorporate the fresh herbs.

        In a separate smaller bowl, whisk together the olive oil, red wine vinegar, garlic powder, cumin, lime juice, salt, and pepper until well emulsified.

          Pour the dressing over the bean and vegetable mixture. Toss everything together until the salad is evenly coated.

            For the best flavor, let the salad rest for about 15 minutes to allow the ingredients to marinate. You can also refrigerate it for a couple of hours if you have more time.
