Quick Spicy Turkey and Bean Chili

1 lb ground turkey

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper (any color), chopped

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) kidney beans, drained and rinsed

1 can (14 oz) diced tomatoes (with juices)

2 tbsp tomato paste

2 cups chicken broth

2 tbsp olive oil

2 tsp chili powder

1 tsp cumin

1 tsp smoked paprika

½ tsp cayenne pepper (adjust for spice)

Salt and pepper, to taste

Optional toppings: chopped cilantro, sour cream, shredded cheese, jalapeños

Instructions
 

Sauté the Base: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and bell pepper, and sauté until softened, about 5 minutes.

    Add the Garlic and Turkey: Stir in the minced garlic and cook for about 1 minute, then add the ground turkey. Cook until browned and no longer pink, breaking it apart with a spoon, about 6-8 minutes.

      Spice It Up: Sprinkle in the chili powder, cumin, smoked paprika, cayenne pepper, and season with salt and pepper. Mix well and cook for another 2 minutes to toast the spices.

        Combine Ingredients: Stir in the diced tomatoes, tomato paste, chicken broth, black beans, and kidney beans. Bring to a boil.

          Simmer: Reduce the heat to low and let the chili simmer for 15-20 minutes, stirring occasionally, until it thickens to your desired consistency.
