Ingredients

For the Shrimp:

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1/2 teaspoon cayenne pepper (adjust for spice)

Salt and pepper to taste

Juice of 1 lime

For the Cilantro Lime Slaw:

2 cups green cabbage, finely shredded

1 cup red cabbage, finely shredded

1/4 cup fresh cilantro, chopped

1/4 cup mayonnaise

2 tablespoons lime juice

1 teaspoon honey

Salt and pepper to taste

For Assembling Tacos:

8 small corn tortillas

Extra cilantro for garnish

Lime wedges for serving

Instructions

Prepare the Shrimp: In a medium bowl, combine the shrimp with olive oil, smoked paprika, garlic powder, cayenne pepper, salt, and pepper. Squeeze the juice of one lime over the mixture and toss to coat. Let marinate for about 15 minutes while you prepare the slaw.

Make the Cilantro Lime Slaw: In a large bowl, mix together the shredded green cabbage, red cabbage, and chopped cilantro. In a separate small bowl, whisk together the mayonnaise, lime juice, honey, salt, and pepper until smooth. Pour the dressing over the cabbage mixture and toss well to combine. Set aside.

Cook the Shrimp: Heat a large skillet over medium-high heat. Once hot, add the shrimp in a single layer (you may need to cook them in batches). Cook for about 2-3 minutes per side, or until they turn pink and opaque. Remove from heat.

Warm the Tortillas: In a dry skillet or directly over a flame, warm the corn tortillas for about 30 seconds on each side until they are pliable.

Assemble Tacos: Place a few shrimp in the center of each tortilla. Top generously with the cilantro lime slaw and garnish with extra cilantro. Serve with lime wedges for squeezing.

Enjoy: Dig into your delicious and zesty shrimp tacos and enjoy the fresh flavors!
