4 salmon fillets (about 6 oz each)

1 cup quinoa, rinsed

2 cups vegetable broth or water

2 tablespoons olive oil

Juice and zest of 1 large lemon

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley or dill for garnish (optional)

Prepare the Quinoa: In a medium saucepan, bring the vegetable broth or water to a boil. Add the rinsed quinoa, reduce the heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and the liquid is absorbed.
