Quick Lemon Garlic Shrimp and Quinoa Bowls

Ingredients
  

1 cup quinoa, rinsed

2 cups vegetable broth (or water)

1 pound large shrimp, peeled and deveined

3 tablespoons olive oil, divided

4 cloves garlic, minced

Zest of 1 lemon

Juice of 1 lemon

1 teaspoon red pepper flakes (adjust to taste)

Salt and pepper, to taste

1 cup cherry tomatoes, halved

1 cup baby spinach

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Quinoa: In a medium saucepan, combine the rinsed quinoa and vegetable broth (or water). Bring to a boil over medium-high heat. Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes, or until the quinoa is fluffy and the liquid is absorbed. Remove from heat and let it sit covered for 5 minutes.

    Prepare the Shrimp: While the quinoa is cooking, heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.

      Sauté the Shrimp: Add the shrimp to the skillet and season with salt, pepper, and red pepper flakes. Cook the shrimp for 2-3 minutes on each side until they turn pink and are cooked through.

        Add Flavor: Once the shrimp are cooked, add the lemon zest and lemon juice to the skillet. Toss everything together, cooking for an additional 1-2 minutes to let the flavors meld. Remove from heat.

          Combine Ingredients: Fluff the cooked quinoa with a fork and then fold in the baby spinach and halved cherry tomatoes. The residual heat from the quinoa will slightly wilt the spinach.

            Assemble the Bowls: Divide the quinoa mixture among four bowls. Top each bowl with the lemon garlic shrimp. Drizzle with the remaining tablespoon of olive oil if desired and garnish with fresh parsley.
