Ingredients

2 salmon fillets (6 oz each)

1 cup fresh parsley, finely chopped

1 tablespoon fresh dill, chopped

1 tablespoon fresh thyme, chopped

2 tablespoons Dijon mustard

1 tablespoon olive oil

2 cups asparagus, trimmed

Salt and pepper, to taste

Lemon wedges, for serving

Instructions

Preheat your oven to 400°F (200°C).

In a small bowl, combine the chopped parsley, dill, thyme, salt, and pepper. Mix well to create the herb crust.

Place the salmon fillets on a parchment-lined baking sheet. Brush the tops of the salmon with Dijon mustard and then press the herb mixture onto the mustard-coated side of each fillet, ensuring it's evenly covered.

Toss the asparagus with olive oil, salt, and pepper in a separate bowl. Arrange the asparagus around the salmon on the baking sheet.

Bake in the preheated oven for about 12-15 minutes, or until the salmon is opaque and flakes easily with a fork, and the asparagus is tender but still crisp.

Remove from the oven and let rest for a minute. Serve with lemon wedges on the side for a fresh burst of flavor.
