2 cups cooked jasmine rice (preferably day-old)

1 cup mixed vegetables (carrots, peas, bell peppers)

2 tablespoons soy sauce (low sodium)

1 tablespoon sesame oil

2 garlic cloves, minced

1 small onion, diced

2 green onions, sliced (for garnish)

1 large egg (optional, for added protein)

Salt and pepper, to taste

A dash of red pepper flakes (for heat, optional)

Prep the Ingredients: If you haven't already, cook the jasmine rice a day before and refrigerate. Dice the onion and mince the garlic. Chop the mixed vegetables into bite-sized pieces.

    Heat the Pan: In a large skillet or wok, heat the sesame oil over medium-high heat. Once hot, add the diced onion and sauté for 2-3 minutes until translucent.
