Ingredients

2 tablespoons olive oil

1 medium onion, finely chopped

2 cloves garlic, minced

1 can (28 oz) crushed tomatoes

2 cups vegetable broth

1 teaspoon dried oregano

1 teaspoon sugar (optional, to balance acidity)

Salt and pepper to taste

1/2 cup fresh basil leaves, roughly chopped

1/2 cup heavy cream (optional for creaminess)

Freshly grated Parmesan cheese for serving

Instructions

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes, until softened. Stir in the minced garlic and sauté for another 1-2 minutes until fragrant.

Add Tomatoes and Broth: Pour in the crushed tomatoes and vegetable broth. Stir to combine. Add the dried oregano, sugar (if using), and season with salt and pepper to taste.

Simmer: Bring the mixture to a gentle simmer. Cover and let it cook for about 15-20 minutes, allowing the flavors to meld together.

Blend: Remove the pot from heat. Using an immersion blender, blend the soup until smooth. Alternatively, you can transfer it in batches to a countertop blender; just be careful with the hot liquid.

Stir in Basil and Cream: Return the blended soup to low heat. Stir in the chopped fresh basil and heavy cream, if using. Allow to warm through for an additional 5 minutes. Adjust seasoning if necessary.

Serve: Ladle the soup into bowls and top with freshly grated Parmesan cheese and a sprinkle of extra basil if desired. Enjoy with crusty bread or a grilled cheese sandwich!
