Quick Chicken Fajita Wraps with Black Beans

1 lb (450g) boneless, skinless chicken breast, sliced thinly

1 bell pepper (any color), sliced into thin strips

1 medium onion, sliced into thin strips

1 can (15 oz) black beans, drained and rinsed

2 tablespoons olive oil

2 teaspoons chili powder

1 teaspoon cumin

1 teaspoon garlic powder

Salt and pepper to taste

4 large whole wheat tortillas

1 cup shredded romaine lettuce

1 medium avocado, sliced

½ cup salsa (your choice of mild or spicy)

¼ cup sour cream or Greek yogurt (optional)

Fresh cilantro for garnish (optional)

Instructions
 

Prepare the Chicken: In a mixing bowl, combine sliced chicken breast, chili powder, cumin, garlic powder, salt, and pepper. Make sure the chicken is well-coated with the spices.

    Cook the Chicken: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook for about 5-7 minutes or until the chicken is cooked through and no longer pink. Remove the chicken from the skillet and set aside.

      Sauté the Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Add the onion and bell pepper strips. Sauté for 3-4 minutes until the vegetables are tender but still crisp.

        Combine Ingredients: Return the cooked chicken to the skillet with the vegetables. Add the rinsed black beans and cook for an additional 2-3 minutes until everything is heated through. Taste and adjust seasoning if necessary.

          Assemble the Wraps: Warm the tortillas in a dry skillet or microwave for a few seconds. Place a generous portion of the chicken, veggie, and bean mixture on each tortilla. Top with shredded lettuce, avocado slices, and a spoonful of salsa.
