2 cups cooked chicken, shredded (leftover rotisserie chicken works great!)

1 bell pepper (any color), thinly sliced

1 small onion, thinly sliced

1 tablespoon olive oil

1 teaspoon taco seasoning (mild, if preferred for kids)

4 large flour tortillas

1 ½ cups shredded cheese (cheddar or Mexican blend)

¼ cup sour cream (optional, for serving)

¼ cup salsa (optional, for serving)

Fresh cilantro (optional, for garnishing)

Instructions
 

Sauté the Veggies: In a large skillet, heat the olive oil over medium heat. Add the sliced onion and bell pepper, and sauté for about 3-4 minutes or until they are tender and slightly caramelized.

    Add the Chicken: Stir in the cooked shredded chicken and taco seasoning. Mix well and cook for an additional 2-3 minutes until everything is heated through. Remove from heat.

      Prepare the Quesadillas: Lay one tortilla in a large skillet or griddle over medium-low heat. Sprinkle ½ cup of shredded cheese evenly over the tortilla, followed by a generous portion of the chicken and veggie mixture. Top with another ½ cup of cheese, and then place a second tortilla on top.

        Cook the Quesadilla: Cook for about 2-4 minutes until the bottom tortilla is golden brown and the cheese is melting. Carefully flip the quesadilla using a large spatula and cook the other side for another 2-4 minutes until it's also golden brown.

          Repeat and Slice: Remove the quesadilla from the skillet, and repeat the process for the remaining tortillas, filling, and cheese. Once all quesadillas are cooked, let them cool for a minute before slicing into wedges.

            Serve: Serve the quesadillas warm with sour cream, salsa, and fresh cilantro for garnish (if desired). Enjoy!
