1 lb (450g) flank steak, thinly sliced against the grain

4 cups broccoli florets

1 red bell pepper, sliced

3 cloves garlic, minced

1-inch ginger, grated

3 tablespoons soy sauce

2 tablespoons oyster sauce

1 tablespoon cornstarch

1 tablespoon vegetable oil

1 teaspoon sesame oil

Salt and pepper, to taste

Cooked rice or quinoa, for serving

Sesame seeds and green onions, for garnish

Prepare the Marinade: In a small bowl, mix together 2 tablespoons of soy sauce, oyster sauce, cornstarch, and a pinch of salt. Add the sliced beef and toss to coat. Let it marinate for at least 10 minutes while you prepare the vegetables.

    Blanch the Broccoli: Bring a pot of salted water to a boil. Add broccoli florets and blanch for about 2 minutes until bright green and tender-crisp. Drain and immediately plunge them into ice water to stop the cooking process. Set aside.

      Stir-Fry the Beef: In a large skillet or wok, heat vegetable oil over medium-high heat. Once hot, add the marinated beef in a single layer. Sear for about 2-3 minutes on each side until browned and cooked through. Remove from the skillet and set aside.

        Cook the Vegetables: In the same skillet, add a bit more oil if necessary. Stir in minced garlic and grated ginger, sautéing for about 30 seconds until fragrant. Add the bell pepper and blanched broccoli, stirring often for about 3-4 minutes until just tender.

          Combine and Season: Return the cooked beef to the skillet, pour in the remaining tablespoon of soy sauce and sesame oil. Stir all the ingredients together until well combined and heated through. Adjust seasoning with salt and pepper to taste.

            Serve: Transfer the stir-fry to a serving dish. Garnish with sesame seeds and chopped green onions. Serve hot over rice or quinoa.
