1 lb ground beef (80/20)

1 medium onion, diced

3 cloves garlic, minced

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (14.5 oz) diced tomatoes (with juice)

1 cup beef broth

2 tbsp chili powder

1 tsp cumin

1 tsp smoked paprika

1/2 tsp salt (to taste)

1/4 tsp black pepper (to taste)

1 bell pepper (any color), diced

1 tablespoon olive oil

Optional toppings: shredded cheese, sour cream, sliced green onions, or fresh cilantro

Instructions
 

In a large pot or Dutch oven, heat the olive oil over medium heat.

    Add the diced onion and bell pepper, cooking for about 3-4 minutes until they start to soften.

      Stir in the minced garlic and cook for an additional minute, until fragrant.

        Increase the heat to medium-high and add the ground beef, breaking it apart with a spatula. Cook until browned, about 5-7 minutes. Drain any excess fat if needed.

          Once the beef is browned, add the chili powder, cumin, smoked paprika, salt, and black pepper. Mix well to coat the meat and vegetables.

            Pour in the diced tomatoes along with their juice, beef broth, kidney beans, and black beans. Stir everything together.

              Bring the chili to a simmer, then reduce the heat to low. Cover and let it cook for 20-25 minutes, stirring occasionally.

                Taste and adjust seasoning if necessary. If you prefer a thicker chili, let it simmer uncovered for an extra 5-10 minutes.

                  Serve hot, garnished with your choice of toppings like shredded cheese, sour cream, green onions, or cilantro.
