8 oz (225g) spaghetti or fettuccine pasta

6 slices of bacon, chopped

2 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon black pepper

½ teaspoon salt (or to taste)

1 tablespoon olive oil

¼ cup fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set the pasta aside.

    Cook the Bacon: In a large skillet, heat the olive oil over medium heat. Add the chopped bacon and cook until crispy, about 6-8 minutes. Remove the bacon with a slotted spoon and let it drain on paper towels. Leave about 2 tablespoons of bacon fat in the skillet.

      Sauté Garlic: In the same skillet with the bacon fat, add the minced garlic and sauté for about 30 seconds until fragrant, stirring constantly to avoid burning.

        Make the Creamy Sauce: Lower the heat to medium-low and pour in the heavy cream. Stir well, and gradually add the grated Parmesan cheese, stirring until the cheese is melted and the sauce is creamy. If the sauce is too thick, add a bit of the reserved pasta water to reach your desired consistency.

          Combine: Add the cooked pasta to the skillet, tossing to coat evenly in the creamy sauce. Stir in the crispy bacon, black pepper, and salt. Adjust seasonings to taste.
