Pumpkin & Kale Lasagna Roll-Ups

9-12 lasagna sheets (regular or gluten-free)

2 cups fresh kale, chopped

1 cup pumpkin puree (canned or fresh)

1 cup ricotta cheese

1 cup mozzarella cheese, shredded

1/2 cup grated Parmesan cheese

1 egg

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

1 teaspoon salt

1/2 teaspoon black pepper

2 cups marinara sauce

Olive oil, for sautéing

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Cook Lasagna Sheets: Bring a large pot of salted water to a boil. Cook the lasagna sheets according to package instructions until al dente. Drain and lay them flat on parchment paper to prevent sticking.

      Sauté Kale: In a large skillet, heat a tablespoon of olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Add the chopped kale and cook until wilted, about 4-5 minutes. Remove from heat and set aside.

        Prepare Cheese Mixture: In a mixing bowl, combine pumpkin puree, ricotta cheese, half of the mozzarella cheese, the egg, oregano, basil, salt, and pepper. Mix until well combined.

          Assemble Roll-Ups: On each lasagna sheet, spread about 3 tablespoons of the pumpkin-ricotta mixture. Add a layer of sautéed kale on top of the cheese mixture. Carefully roll up the lasagna sheet starting from one end and place seam-side down in a lightly greased baking dish.

            Repeat Process: Repeat the filling and rolling process with the remaining sheets and filling, placing each roll-up snugly in the baking dish.

              Add Sauce and Cheese: Pour marinara sauce over the roll-ups, ensuring they are all well coated. Sprinkle the remaining mozzarella and Parmesan cheese evenly over the top.

                Bake: Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden brown.

                  Cool and Serve: Remove from the oven and let it cool for about 10 minutes before serving. Garnish with fresh basil or parsley if desired.
