Ingredients

1 cup pure pumpkin puree (canned or homemade)

1/4 cup unsweetened applesauce

1/4 cup vegetable oil (or melted coconut oil)

1/2 cup brown sugar, packed

1/4 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon salt

1 cup semi-sweet chocolate chips (plus extra for topping, optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it with cooking spray.

Mix Wet Ingredients: In a large mixing bowl, whisk together the pumpkin puree, applesauce, vegetable oil, brown sugar, granulated sugar, eggs, and vanilla extract until smooth and well combined.

Combine Dry Ingredients: In another bowl, sift together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Mix well until evenly combined.

Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet mixture, stirring just until no flour pockets remain. Be careful not to overmix.

Add Chocolate Chips: Gently fold in the chocolate chips, reserving a few for topping if desired.

Fill Muffin Tins: Evenly distribute the batter into the prepared muffin tin, filling each cup about two-thirds full. If using, sprinkle a few additional chocolate chips on top of each muffin.

Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.

Cool: Once baked, remove the muffins from the oven and let them cool in the tin for 5 minutes. Then transfer them to a wire rack to cool completely.

Serve and Enjoy: These muffins are best enjoyed warm, and they can be stored in an airtight container at room temperature for up to 3 days.
