1 cup ripe bananas (about 2-3 medium bananas), mashed

1 cup canned pumpkin puree

1/3 cup melted coconut oil or vegetable oil

1/2 cup brown sugar

1/4 cup maple syrup or honey

2 large eggs

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1/2 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon salt

1/2 cup chopped walnuts or pecans (optional)

1/2 cup chocolate chips (optional)

Instructions
 

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease it.

    Mix Wet Ingredients: In a large mixing bowl, combine the mashed bananas, pumpkin puree, melted coconut oil, brown sugar, maple syrup (or honey), eggs, and vanilla extract. Whisk until smooth and well combined.

      Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, baking powder, ground cinnamon, ground nutmeg, and salt.

        Incorporate Dry into Wet: Gradually add the dry ingredient mixture to the wet mixture, stirring gently until just combined. Be careful not to overmix; a few lumps are okay.

          Add Nuts and Chocolate (Optional): If you’re using walnuts or pecans and/or chocolate chips, gently fold them into the batter for added texture and flavor.

            Fill Muffin Tin: Evenly distribute the muffin batter into the prepared muffin tin, filling each cup about 2/3 full.
