1 lb (450g) large shrimp, peeled and deveined

1 ripe pineapple, peeled, cored, and cut into 1-inch chunks

1 red bell pepper, cut into 1-inch squares

1 green bell pepper, cut into 1-inch squares

1 small red onion, cut into quarters

3 cloves garlic, minced

¼ cup extra virgin olive oil

2 tablespoons soy sauce

2 tablespoons honey

Juice of 1 lime

1 teaspoon ground ginger

1 teaspoon paprika

Salt and pepper, to taste

Skewers (if using wooden skewers, soak in water for 30 minutes)

Instructions
 

Marinate the Shrimp: In a bowl, whisk together the olive oil, soy sauce, honey, lime juice, minced garlic, ground ginger, paprika, salt, and pepper. Add the shrimp to the marinade, ensuring they're fully coated. Cover and refrigerate for at least 30 minutes, preferably 1-2 hours.

    Prepare the Skewers: If using wooden skewers, soak them in water to prevent burning on the grill. Preheat your grill to medium-high heat.

      Assemble the Skewers: Thread shrimp, pineapple chunks, bell peppers, and red onion onto the skewers, alternating ingredients for a vibrant presentation. Aim for about 4-5 shrimp per skewer, depending on size, with a piece of pineapple and a piece of bell pepper in between each shrimp.

        Grill the Skewers: Place the assembled skewers on the preheated grill. Grill for 3-4 minutes per side, or until the shrimp turn pink and opaque, and the vegetables are tender and slightly charred. Brush with any remaining marinade halfway through grilling for extra flavor.

          Serve: Remove the skewers from the grill and let them rest for a minute. Serve hot, garnished with fresh lime wedges and chopped cilantro for an added zing.
