Pineapple BBQ Meatballs

For the Meatballs:

1 lb ground beef or turkey

1/2 cup breadcrumbs

1/4 cup grated Parmesan cheese

1/4 cup finely chopped fresh cilantro

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1 large egg

For the Pineapple BBQ Sauce:

1 cup pineapple juice

1 cup BBQ sauce (preferably a sweet variety)

1 tablespoon soy sauce

1 tablespoon apple cider vinegar

1 teaspoon ground ginger

1/2 teaspoon red chili flakes (optional, for heat)

1 cup crushed pineapple, drained

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Make the Meatballs:

      - In a large bowl, combine the ground beef or turkey, breadcrumbs, Parmesan cheese, cilantro, garlic powder, onion powder, salt, black pepper, and the egg.

        - Mix until well combined, but do not overwork the meat. Form the mixture into meatballs about 1 inch in diameter and place them on the prepared baking sheet.

          Bake the Meatballs:

            - Bake in the preheated oven for 18-20 minutes, or until cooked through and browned.

              Prepare the Pineapple BBQ Sauce:

                - While the meatballs are baking, in a medium saucepan over medium heat, combine the pineapple juice, BBQ sauce, soy sauce, apple cider vinegar, ground ginger, and red chili flakes (if using).

                  - Bring to a simmer and then stir in the crushed pineapple. Let it cook for about 5-7 minutes, allowing the flavors to meld together.

                    Combine Meatballs and Sauce:

                      - Once the meatballs are done baking, remove them from the oven and transfer them into the saucepan with the BBQ sauce. Gently toss the meatballs in the sauce until they’re thoroughly coated.
