Pineapple BBQ Chicken Flatbreads

2 large flatbreads or naan

1 cup cooked chicken, cubed (grilled or rotisserie works great)

1 cup fresh pineapple chunks (you can use canned if necessary)

1 cup BBQ sauce (preferably a tangy or sweet variety)

1 cup shredded mozzarella cheese

1/2 cup red onion, thinly sliced

1/4 cup fresh cilantro, chopped (for garnish)

1 tablespoon olive oil

Salt and pepper to taste

Optional: sliced jalapeños for heat

Preheat the oven: Start by preheating your oven to 425°F (220°C). If you have a pizza stone, place it in the oven to heat up as it will give the flatbreads a nice crispy texture.

    Prep the chicken: In a mixing bowl, combine the cooked chicken with 1/2 cup of BBQ sauce. Toss until the chicken is evenly coated. Set aside.

      Prepare the flatbreads: On a baking sheet, place the flatbreads. Brush a light layer of olive oil on each flatbread to enhance the flavor and help with browning.

        Spread the sauce: Spoon the remaining BBQ sauce evenly over each flatbread, leaving a small border around the edges.

          Layer the toppings: Distribute the BBQ chicken evenly over the sauce, followed by scattering the fresh pineapple chunks, red onion slices, and shredded mozzarella cheese on top. If you like some heat, add sliced jalapeños as well.

            Bake: Place the flatbreads in the preheated oven (or on the pizza stone). Bake for 12-15 minutes, or until the cheese is bubbling and the edges of the flatbreads are golden and crispy.

              Garnish: Once done, remove the flatbreads from the oven. Allow them to cool slightly before garnishing with fresh cilantro.

                Serve: Slice into pieces and serve warm, paired with extra BBQ sauce on the side if desired.
