Philly Cheesesteak Soup

Ingredients
  

1 lb (450g) ribeye steak, thinly sliced

2 tablespoons olive oil

1 medium onion, chopped

1 green bell pepper, diced

1 red bell pepper, diced

3 cloves garlic, minced

4 cups beef broth

1 cup heavy cream

1 tablespoon Worcestershire sauce

1 teaspoon dried oregano

Salt and pepper, to taste

2 cups frozen or fresh mushrooms, sliced

1 cup provolone cheese, shredded

1 cup cheddar cheese, shredded

Fresh parsley, chopped (for garnish)

Crusty bread or baguette, for serving

Instructions
 

Sear the Steak: In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the thinly sliced ribeye steak and season with salt and pepper. Sear until browned, approximately 3-4 minutes. Remove the steak from the pot and set aside.

    Sauté Vegetables: In the same pot, add the chopped onion, green bell pepper, and red bell pepper. Sauté for about 5-7 minutes until the vegetables are softened. Add the minced garlic and cook for an additional 1 minute until fragrant.

      Add Broth and Seasonings: Pour in the beef broth, scraping the bottom of the pot to deglaze it. Stir in the Worcestershire sauce, dried oregano, and sliced mushrooms. Bring the mixture to a simmer.

        Combine Everything: Return the seared steak to the pot. Reduce heat to low and stir in the heavy cream. Simmer gently for 10-15 minutes to let the flavors meld together while the soup thickens slightly.

          Melt the Cheeses: Gradually stir in the provolone and cheddar cheese until melted and well combined. Taste and adjust seasoning with salt and pepper, if needed.

            Serve: Ladle the soup into bowls and garnish with fresh parsley. Serve with crusty bread or a baguette for dipping.
