Instructions

Preheat the Oven: Preheat your oven to 325°F (160°C). Grease a 9x13 inch baking pan and line it with parchment paper for easy removal.

Make the Crust: In a medium bowl, combine graham cracker crumbs, melted butter, sugar, and ground cinnamon. Stir until the mixture resembles wet sand. Press the mixture firmly into the bottom of the prepared baking pan. Bake for 10 minutes, then allow to cool slightly.

Prepare the Cheesecake Filling: In a large mixing bowl, beat the softened Philadelphia cream cheese with an electric mixer on medium speed until creamy and smooth. Gradually add granulated sugar and mix until well combined.

Add Eggs: Add the eggs, one at a time, mixing on low speed until just incorporated. Be careful not to overmix.

Incorporate Remaining Ingredients: Add vanilla extract, sour cream, flour, and lemon zest (if using). Mix until everything is well blended and smooth.

Pour and Bake: Pour the cheesecake filling over the cooled crust, spreading it evenly. Bake in the preheated oven for about 30-35 minutes, or until the edges are set but the center still has a slight jiggle.

Cool: Turn off the oven and crack the oven door, letting the cheesecake bars cool in the oven for about an hour. This helps prevent cracking.

Chill: After cooling, refrigerate the cheesecake bars for at least 3 hours or overnight for the best texture.

Serve: Once chilled, lift the cheesecake bars out of the pan using the parchment paper. Cut into squares and serve with fresh berries on top. Dust with powdered sugar if desired.
